| Cabernet wine Rabbit Ridge Cabernet Sauvignon 2005 was barrel-aged in French and American oak for approximately 15 months to achieve the perfect balance. A judicious amount of Petite Sirah was added to create this big, concentrated dark Cabernet Sauvignon boasting a great deal of complexity. The wine was bottled unfiltered and unfined to preserve all the natural flavors and is totally natural with the exception of yeast added during fermentation. The limestone characteristics of the Rabbit Ridge vineyards allow them to produce this Cabernet Sauvignon with 100% natural acid. Enjoy the notes of dark cherry, black currant, cedar and herbs. Only 2,197 cases produced and the price is as good as it gets for a vintage, barrel aged California Cabernet.
Rabbit Ridge winery has all their vineyards in Paso Robles. This area of limited water, shallow, rugged, rocky, calcareous soils will produce some of the finest wines in Paso Robles, and among the finest in California. It is common during the growing season for the temperature on the west side to drop from 90 degrees at 3:00 in the afternoon, to 65 degrees by 6:00 PM, and then to 40 degrees at night. They planted the vineyards precisely throughout the Paso Robles appellation to take advantage of the unique micro climates and soil characteristics that would best suit each grape variety. You can taste perfection in their boutique wines.
